Andouille Sausage w/ Rice & Beans

 
This turned out to be one of my favorite dishes. Very wholesome and delicious. The spices from the sausage really combine well with the beans and rice. The peppers and onions add color and flare to this dish. As for my critics ---> Critic B ate all the meat but didn't like the beans, Critic A cleaned his plate and loved every bite, Critic D liked everything but the red kidney beans.

Ingredients:
1 pkg. of Andouille Sausage (or any kind of smoked sausage will do)
1 can of Red Kidney Beans
1 can of Cannellini Beans (white kidney beans)
1 Red Pepper - chopped
1 Green Pepper - chopped
1 small Onion - chopped
2 cups of White Rice
½ cup of water
Garlic & Herb Seasoning
Cajun Seasoning
2 tbsp. of Butter

Step 1:
Cut up the sausage into little round pieces. Cook them on medium heat in a large saute pan or wok. Cook until slightly burnt. Meanwhile in another pot, start boiling the rice.
 
Step 2:
Add into the sausage the chopped peppers and onion. Cook until vegetables are tender. Add a dash of the garlic & herb and the Cajun seasoning.
 
Step 3:
Once the vegetables are cooked, add in the 2 cans of beans and the ½ cup of water. Cook until beans are tender and fully cooked. Add the butter to the fully cooked rice.
 
Step 4:
Serve on top of the rice. Now grab your fork and eat!

  4. Sounds great! I love this type of dish, but I don't think we have andouille sausage here. Of course, it'd be great with any spiced sausage, I assume. Thank you for sharing, Danielle.
