Zuchini Patties

 
   There is nothing better than fried food! Its always good and this recipe is no exception. One of our family favorites is the fried Zuchini Patties. All the critics agree hands down that this recipe is excellent. Whenever I make these they are gone within minutes. These are best served warm and can be eaten as a snack, an appetizer, or even as a side to a delicious meal.

Ingredients:
1 pkg. of Saltine Crackers (crushed)
2 Lg. Zucchinis
1 small Onion
1 cup of Shredded Cheddar Cheese
4 Tbsp. of Flour
2 Eggs
½ cup of Cooking Oil
 
Step 1
Start by chopping the Zucchini into small chunks. In a medium mixing bowl combine
the zucchini with the saltine crackers, onion, shredded cheese, and eggs. Mix Well.
Heat the oil in a medium frying pan.
 
Step 2
Next add the flour. Mix together. Using your hands, Shape the ingredients into patties
and place in oil when ready. Add a little salt & pepper to taste while frying.
 
Step 3
Let them fry until golden brown. Take them out of the oil and set them on
a plate with a paper towel to get rid of excess grease.
 
For Best Results, Eat while still Warm!
